About Pysk

We’re Giles and Sarah and we run Pysk (middle-Cornish word meaning “fish”, pronounced /pɪːsk/) from our shop in Falmouth. 

We aim to enable people in the UK to eat seafood that is traceable, high quality and produced with consideration for the marine ecosystem and people.

Transparency is core to Pysk’s ethos; by allowing the customer to learn about their food’s provenance and processing, Pysk enables more considerate consumption. Through Pysk’s learning and communication to customers, we will provide resources for more informed decision making which will help contribute to positive change in how we eat from the sea.

Quality

To deliver high quality, conscientious sourcing, efficiency and preservation are important parts of Pysk’s process. We need to preserve some of our products at top quality for consumption, as access to high-quality fish of a responsible provenance is unpredictable. As well as supplying top quality fresh seafood, for certain products, Pysk uses blast freezing to lock in freshness, thermal processing of fish in cans to preserve oily fish and special recipes, as well as curing and smoking for short-term preservation. 

People & Nature

Awareness of environmental change appears to be growing among both fishers and consumers. We communicate our sourcing clearly, allowing customers to make informed decisions.

Sourcing seasonal fresh fish and sharing its provenance is central to what we offer. Whether you visit our shop or browse our website, we will provide resources to help you decide what fish to buy and hope we can move towards positive change in how we eat from the sea.

Throughout the year and even day-to-day there is variability in what the sea has to offer. Spawning seasons, migratory habits, weather & tidal conditions all have a part to play in when certain species are available. We therefore look each day to select the best quality, seasonal, sustainable fish. Bright eyed, plump, seasonal specials are our focus. This can mean there’s an element of surprise in what’s available to eat, but we hope you will find this a pleasure and a way to enjoy fish at its best.

Following the seasons and avoiding eating fish during spawning time also helps preserve stock levels. We take care to buy mature fish of a sustainable size.

Pysk Ltd was established in April 2020, during the Covid-19 pandemic as direct home delivery and online.

Care for the environment


Orders are packed in recyclable, insulative paper and then into cardboard boxes. We vacuum pack fish for safe transportation and convenient freezing and are currently looking at compostable options for this.

Limiting waste


If we have to buy quantities of fish surplus to what our customers have ordered then extra fish is blast frozen ready for sale in farm shops.

Fish carcasses resulting from filleting either become bait for fishers or go to a plant for conversion to fish meal or other uses.

To help you buy the right amount for the meal(s) you have planned, we offer the following guidance on portion sizes.

A standard portion size for an adult is 150g to 200g.
