Brill is a prime flatfish similar to turbot, although lacking the knobbly calluses of turbot. It is quite large with smooth skin and meaty flesh. It matures relatively fast helping to give it a biological vulnerability rating of 31%, meaning the species is less vulnerable to being affected by overfishing. Cornwall Inshore Fisheries and Conservation Authority has set a minimum landing size in Cornwall for brill of 30cm whereas, there is no EU minimum landing size.
