The Red Gurnard, or?Chelidonichthys Cuculus, is native to the eastern Atlantic and is widespread from as far north as Norway to as far south as Madeira. It feeds on bottom-dwelling invertebrates such as crustaceans, giving it a characteristic, rich earthy flavour and firm flesh. The Gurnard has recently seen a rise in popularity thanks to celebrated chefs, such as Rick Stein, although not quite to the same degree as other previously unappreciated species, like Monkfish. It is rated as recommended by the Cornwall Good Seafood Guide.
