Brill, a prime flatfish resembling turbot, lacks knobbly calluses. It features a dark, mottled upper side and a pale underside, with smooth skin and meaty flesh. Brill has a sweet, delicate flavor and firm texture, making it versatile for cooking methods like grilling, pan-frying, baking, or poaching.

Brill is a prime flatfish similar to turbot, although lacking the knobbly calluses of turbot. The dark upper side, characterized by a mottled pattern, sharply contrasts with its pale underside. It is quite large with smooth skin and meaty flesh. It has a sweet, delicate flavour and firm texture.

Brill can be cooked various ways, including grilling, pan-frying, baking, or poaching. A classic preparation involves simply grilling the fillets and serving them with a light lemon-butter sauce or capers. Brill’s white, flaky flesh holds up well to these methods, allowing it to be a canvas for various seasonings and accompaniments.

Traceability

Each package in your order is labelled with the name of the vessel, or group of vessels, responsible for catching your fish, along with the their home port in Cornwall.

Delivery is free on orders over £50.

Orders placed before 10pm Monday – Wednesday arrive 48 hours after. Orders placed Thursday -Sunday are delivered on Wednesday.

£8.95 postage fee applies on orders under £50 that contain chilled goods.

Click & Collect is available from our Falmouth shop.

You will receive a pick up confirmation email when your order is ready to be collected, which will be same day. 

To help you buy the right amount, we offer the following guidance on portion sizes.

A standard portion size for an adult is 150g to 200g of edible fish.

When you buy fillets, the weight of the fillets is all edible weight.

If you’re buying whole fish you need to account for the weight of bones and parts which aren’t edible.
