Monkfish are a type of anglerfish with large, broad heads and wide mouths filled with sharp teeth. They have a unique fishing apparatus on top of their heads, known as an “esca,” which they use to lure prey towards their jaws. Monkfish have rough, brownish to reddish-brown skin, which often camouflages them on the seabed.
Monkfish are highly regarded in the culinary world for their succulent, firm, and white flesh. Often referred to as the “poor man’s lobster” due to its lobster-like texture and taste, monkfish has a delicate flavour and a very firm texture that holds up well to various cooking methods. It is often used in gourmet dishes, such as monkfish medallions wrapped in bacon or monkfish curry.
