Filleting workshops

Introductory classes

A professional filleter will demonstrate and teach preparation techniques on the day’s fish. Filleting and deboning will be taught. Depending on the fish and group interest, gutting, scaling and skinning may also be covered.

No experience necessary

Intermediate classes

This will focus on higher level knife skills, looking at yield and speed as well as some more advanced techniques, such as butterfly filleting and canoeing.

Some previous experience of preparing fish would be an advantage.

In all classes, each attendee will be provided with equipment to practice the skills taught with the tutor on hand for extra guidance. 

All fish that you prepare during the workshop will be yours to take home and will be wrapped in paper or vacuum packed as you prefer. The same can be done for frames and any other parts of the fish you wish to take with you.
