Couch's bream is a member of the sea bream family with an oval, moderately compressed body and striking reddish-pink to silver scales on its upper half. The flesh is white, tender and has a delicate, sweet flavour.
It's versatile — grilling, baking, steaming or pan-frying all suit it well.
