About Pysk

We’re Giles and Sarah and we run Pysk (middle-Cornish word meaning “fish,” pronounced /pɪːsk/) from our shop in Falmouth. We aim to enable people in the UK to eat seafood that is traceable, high quality and produced with consideration for the marine ecosystem and people.

Transparency

Transparency is core to Pysk’s ethos; by allowing the customer to learn about their food’s provenance and processing, Pysk enables more considerate consumption. Through Pysk’s learning and communication to customers, we will provide resources for more informed decision making which will help contribute to positive change in how we eat from the sea.

Quality

To deliver high quality, conscientious sourcing, efficiency and preservation are important parts of Pysk’s process. We need to preserve some of our products at top quality for consumption, as access to high-quality fish of a responsible provenance is unpredictable. As well as supplying top quality fresh seafood, for certain products, Pysk uses blast freezing to lock in freshness, thermal processing of fish in cans to preserve oily fish and special recipes, as well as curing and smoking for short-term preservation.

People & Nature

Awareness of environmental change appears to be growing among both fishers and consumers. We communicate our sourcing clearly, allowing customers to make informed decisions.
