Haddock is a close relative of cod — flaky, mildly sweet white flesh with a clean, approachable flavour. It's smaller than cod, and you can tell the two apart by the dark lateral line running down haddock's silvery-grey body and the black spot above each pectoral fin.
Excellent in fish and chips, fish pies or simply grilled. It also takes very well to light smoking.
