Dover sole is a prized flatfish with an oval body, smooth skin, and both eyes on the dark upper side that provide excellent camouflage when it lies flat on the seabed. The flesh is firm, delicate and sweetly flavoured — a fine-dining stalwart.
Classic preparations like sole meunière — pan-fried in butter with lemon and parsley — showcase it at its best, though it takes equally well to grilling or poaching.
