Cuckoo rays have a diamond-shaped body with a grey-brown upper side speckled in dark spots and a pale underside. They spend their days on sandy or muddy seabeds, solitary by nature, hunting small fish and crustaceans.
Cooked, cuckoo ray has the same delicate sweet flavour and long, succulent strands of meat as its bigger ray cousins. It's happy poached, pan-fried or baked in a parcel.
