Cod is one of the best-known fish in British kitchens — firm, white, flaky flesh with a mild, clean flavour that takes well to almost any preparation. They have elongated bodies, a distinctive chin barbel, and a mottled greenish-brown back.
Overfishing has put pressure on cod populations in many areas, so sourcing matters. Good grilled, baked or battered.
