The common octopus is a large, intelligent cephalopod with eight sucker-lined arms and a remarkable ability to change colour and texture. Not traditional British fare, but a staple of Mediterranean cooking — slow simmering or a Spanish-style grill turns the firm flesh beautifully tender.
