Black bream are small-to-medium fish with a striking blue-black upper body and silvery-white underside, usually 20–40cm long. They're slow-growing and long-lived, feeding on small crustaceans and invertebrates around rocky environments and estuaries.
The flesh is mild and delicate — happy to be grilled, baked or pan-fried. Thanks to their slow growth, it's worth choosing bream from sustainable sources.
