Grey mullet have elongated, cylindrical bodies and feed across freshwater, estuarine and coastal habitats. We tend to supply the golden grey mullet, distinguishable by golden patches on their gill covers — they live further out at sea and have a cleaner, less muddy flavour than their river-dwelling cousins.
The flesh is white, tender, rich but not overpowering, with a firm meaty texture. It takes well to grilling, baking or pan-frying, and smokes beautifully.
