Coley — also known as saithe — is a member of the cod family with a slender body and dark greenish-brown back. The flesh is white, flaky and slightly sweet, much like cod but at a friendlier price.
It's versatile in the kitchen: grilling, smoking, frying and baking all work well. An affordable, more sustainable alternative to cod or haddock for fish and chips, chowders and fish pies.
