Dabs are small flatfish, usually 20–30cm, with an oval body and both eyes on the right side — the classic flatfish layout. They live on sandy or muddy seabeds and feed on small worms and crustaceans. The flesh is delicate, mild and white — perfect for pan-frying or grilling whole. Less famous than sole or plaice, but excellent in its own right.
